The sense of smell is one of the human senses that have been used throughout history to detect smells and interact with the surrounding world. Electronic noses have evolved significantly since their inception. They have changed from bulky, expensive and energy-intensive devices to today's simple and economical models with minimal electricity requirements. Electronic nose is a combination of hardware and software components. It uses an electronic sensor to detect the effects of various chemicals in the ambient air. The odor sensors at the heart of e-nose technology reflect the complex mechanisms of the human olfactory system. This tool is used in food analysis, medical diagnosis, environmental monitoring, security and various other fields. The electronic nose has emerged as a versatile and essential tool in the food industry, offering a range of multifaceted applications that significantly contribute to quality assurance, provenance detection, process optimization, and waste reduction. This article is an overview of the latest innovations and recent developments to facilitate access to comprehensive and general information about this technology.
